Why Choose Lamb Shoulder Chopped?
The shoulder is known for its balanced ratio of lean meat and natural fat, which makes it especially suitable for long cooking methods. Grass feeding contributes to a clean, authentic lamb taste, while grain finishing enhances juiciness and ensures even cooking results. When slow cooked, the meat becomes exceptionally tender, absorbing spices, herbs, and sauces beautifully.
Australian Lamb Shoulder Chopped is produced under strict hygiene and export standards, offering excellent traceability and food safety. It is suitable for home cooks, restaurants, and catering operations seeking reliable quality and robust flavor. Learn more about Australian lamb at Meat & Livestock Australia.
How to Cook Lamb Shoulder Chopped
This chopped shoulder cut is widely used in Middle Eastern, Indian, Mediterranean, and Western cuisines. It performs well in stews, tagines, rendang-style dishes, curries, casseroles, and oven-roasted meals. The cut maintains structure during cooking while developing rich, comforting flavors.
Brown the pieces in batches, then build your sauce with onion, garlic, ginger and spices. Add tomatoes, coconut milk or stock and simmer gently for 1½–2 hours until the meat is tender. The bone pieces add extra body and flavour to the sauce.
Not sure which cut to choose? Racks, loin chops and rump are best cooked quickly and served pink, while shoulder, shanks and diced lamb reward slow cooking. Australian lamb has a clean, mild flavour that pairs well with garlic, rosemary, mint, cumin and yoghurt, from Sunday roasts to curries and kebabs.
