How to Cook Lamb Leg Boneless
This cut is ideal for oven roasting, BBQ grilling, pan searing, or slicing into steaks or cubes. It performs well in Mediterranean, Western, and Asian-inspired dishes, absorbing marinades and seasonings effectively while remaining juicy when cooked correctly.
To roast, open the leg out, season the inside with garlic, herbs and lemon zest, then roll and tie it with string. Roast at 200°C for about 20–25 minutes per 500g for medium and rest for 15 minutes. Butterflied, it is excellent on the barbecue after a yoghurt and spice marinade.
Not sure which cut to choose? Racks, loin chops and rump are best cooked quickly and served pink, while shoulder, shanks and diced lamb reward slow cooking. Australian lamb has a clean, mild flavour that pairs well with garlic, rosemary, mint, cumin and yoghurt, from Sunday roasts to curries and kebabs.
Storage
