Why Choose Australian Lamb Rack?
Naturally raised in Australia on grass-fed and grain-finished to enhance tenderness and depth of flavour, this lamb is carefully produced without antibiotics or growth hormones, ensuring a clean, high-quality, and responsibly raised product from farm to table.
This premium lamb rack features an excellent balance of lean meat and marbling, delivering a juicy texture and consistent quality in every cut. It has a clean, delicate aroma with a naturally rich yet refined flavour profile that highlights the true character of lamb without being overpowering.
Ideal for roasting, grilling, or pan-searing, this Australian lamb rack performs exceptionally well in both home kitchens and professional settings. Whether served as a centrepiece for a special occasion or as part of a fine-dining menu, it offers reliable tenderness, elegant presentation, and outstanding eating quality.
How to Cook Australian Lamb Rack
Take the rack out of the fridge 30 minutes before cooking and pat it dry. Season with salt, pepper, garlic and rosemary, then sear the fat side in a hot pan until golden. Roast at 200°C for 12–18 minutes depending on size, until the centre reaches about 55–58°C for medium-rare. Rest for 8–10 minutes, then slice between the bones into cutlets. A herb crust of breadcrumbs, mustard and parsley is a classic finish.
Storage
Keep chilled at 0–4°C and cook by the use-by date, or freeze on the day of delivery. Learn more about how lamb is raised in Australia at Meat & Livestock Australia, or browse our full lamb selection for chops, shanks and leg cuts.
